PROFESSIONAL EXPERIENCE My research focuses in the area of foodborne pathogens in relation to production animals (Pre and post harvest).  Current projects ongoing are exploring the critical links between infectious diseases and foodborne illness.  Primarily, my focus has consisted of studies of pathogens such as Listeria, Salmonella, Campylobacter, Escherichia coli O157:H7 and Yersinia enterocolitica to mention a few.  We have examined these organisms in a range of animal species including poultry, bison, beef cattle, pork and lamb.

 

We use a range of conventional and rapid methods to recover and detect these organisms in tissues and other samples from production animals at the farm, processing and retail levels.  We use methods such as Polymerase Chain Reaction (PCR), Pulsed Field Gel Electrophoresis (PFGE) and antimicrobial sensitivity screening to profile our isolates and determine the relationship between these factors and their selection and persistence in nature.

Other studies currently ongoing focus on the nature of the relationships between virulence factors associated with these pathogens and human illness and their survival and persistence in the food chain.
